Acclaimed chef Jean-Marie Josselin brings a taste of Hawaii and exquisite
Euro-pacific cuisine to Caesars Palace with 808. The restaurant offers the
chef’s Hawaiian-themed fusion signature cuisine, which spotlights exciting
elements of Thai, Indian, Japanese, Chinese, Italian, and French fine dining.
The 808 menu offers a variety of seafood appetizers and main courses. Chef de
Cuisine Wesley Coffel also prepares veal, beef, chicken and lamb entrées. The
dessert offerings will tempt anyone with a love of tropical fruits, ice cream or
delicious sweets.
BRADLEY OGDEN
Famed Bay Area chef Bradley Ogden, whose new take on classic “farm fresh”
American cuisine has earned him national acclaim and a gallery of top culinary
awards, opened his first restaurant outside of California at Caesars Palace.
Ogden rose to national prominence as the executive chef for San Francisco’s
renowned Campton Place Hotel. Later, Ogden and partner Michael Dellar opened
Ogden’s signature restaurant, The Lark Creek Inn in Marin County, just north of
San Francisco, which has been acclaimed by leading critics and publications as
one of the best restaurants in the nation. It was followed by One Market
Restaurant in San Francisco, Lark Creek in Walnut Creek and San Mateo, Yankee
Pier in Larkspur, Parcel 104 in Santa Clara and Arterra in Del Mar.
Among other awards, Ogden has been named Best Chef California by the James Beard
Foundation, one of the Great American Chefs by the International Wine and Food
Society, winner of the Golden Plate Award by the American Academy of Achievement
and Chef of the Year by the Culinary Institute of America. A popular television
guest, Ogden has appeared on the Today show, Good Morning, America, AM/San
Francisco, Dinner at Julia’s and the Discovery Channel’s Great Chefs of the West
series.
EMPRESS COURT

luxurious home in the Empress Court restaurant of Caesars Palace, named in USA

Not only an exotic epicurean attraction for discriminating clientele, Empress

HYAKUMI
The Hyakumi (pronounced ya-Coo-me) Japanese Restaurant & Sushi Bar offers fresh
sushi and sashimi prepared by master chef’s, Teppan Yaki-style cooking and
Japanese à la carte dining.
À la carte dinner selections include combination plates featuring such favorites
as Beef, Chicken or Fish Teriyaki, Yakitori, Shrimp and Vegetable Tempura. The
dinner menu also spotlights a variety of soups, salads, vegetables, and noodles,
such as Tempura and Salmon Shioyaki, Soba, Tempura Noodles, Somen, and Soba
Pasta Salad.
At the sushi bar guests may choose from 40 items, including Fresh Yellow Tail,
Imported Spanish Mackerel, Vegetable Rolls, Salmon Egg, Squid and Abalone.
Complementing the exotic fare is an extensive beverage selection, with specialty
drinks, a variety of Japanese and domestic beer and varied selection of fine
sake.
MESA GRILL
Award-winning chef, best-selling cookbook author, and popular television
personality Bobby Flay will bring the vibrant Southwestern cuisine of his
acclaimed Mesa Grill to Las Vegas when he opens his first restaurant outside of
New York City at Caesars Palace in 2004.
"My goal with Mesa Grill has always been to create boldly flavored food in a
high-energy environment," said Flay. His tantalizing and innovative fare – like
Shrimp and Roasted Corn Tamale, New Mexican Spice-Rubbed Pork Tenderloin with
Bourbon-Ancho Chile Sauce, and Sweet Potato Tamale with Crushed Pecan Butter –
has earned him numerous accolades and awards, and helped to establish his
position as a leading New York chef and major American culinary force.
The addition of Mesa Grill to the ever-growing list of world-class dining
experiences available to guests of Caesars Palace helps further the resort's
reputation as a culinary destination, and gives visitors to Las Vegas even more

NEROS
Specializes in dry-aged prime beef, tender chops, fresh fish and seafood, Neros
boasts tantalizing American contemporary dinner selections for the most
discriminating palates.
Neros Chef Jose Martinez has created signature cuisine for the restaurant. Some
of the entrees are classic favorites, but none is ordinary, and each is
artistically presented in the tradition of great culinarians.
Like all Caesars Palace gourmet restaurants, Neros offers an extensive wine
list, customized for the restaurant.
TERAZZA
Savor the tastes of authentic Italian cuisine with risotto, antipasti, soups,
